Chris has been busy in the kitchen this week, recreating Aunty Pat’s tasty autumn recipe using our very own Otter Vale marmalade. This rustic Apple Cake is simple to make and tastes incredible when served warm with crème fraîche or vanilla ice cream. Yum!
58g Demerara sugar
70g softened butter
1 tbs cream or top of milk
116g Otter Vale marmalade
2 tbs plain flour
Approx 3 medium cooking apples peeled, cored and sliced
Grease and line tin approx 7″ x 11″ x 1.5″
Oven 180 oC
Beat fat, sugar and egg together. Sift flour and baking powder, beat into creamed mixture with the 6tbs milk. Spread evenly over tin.
Blend all frosting ingredients together.
Put sliced apple over cake batter slightly overlapping to cover.
Dot frosting lightly over apple and spread.
Bake for approx 50mins
Serve warm with creme frais or vanilla ice cream. Delicious!!
